For transportation and storage, Dewar vessels (similar to thermos flasks) are used. They significantly reduce heat transfer from the environment and minimize evaporation losses. If liquid nitrogen is poured into a regular glass, it will typically evaporate within about 5 minutes, which is unacceptable for most applications.
